[CnD] Spicy Rice And Beans

We made this at our cooking group today.
One of our members is a vegetarian.
We also put a dollop of plain yogurt on top of each serving, for those who 
wanted it.

Spicy Rice And Beans

1 Tbsp vegetable or olive oil
2 cloves garlic, minced
1 large onion, chopped
1 red pepper, diced
¾ cup long-grain brown rice
½ cup dried lentils
½ tsp chili powder
¼ tsp ground cumin
Dried thyme and basil to taste
2-2/3 cups vegetable or chicken stock
1 cup chunky salsa
1 19 ounce can, red kidney beans, well drained and rinsed
Salt and pepper to taste.

Heat oil in Dutch oven.
Add garlic and onion, stir 3-5 minutes.
Add pepper, stir and cook for 3 minutes.
Stir in rice, lentils, and spices.
Stir and cook for 1 minute.
Add stock, salsa and kidney beans.
Stir gently.
Cover and bake at 350 for 1-1/2 hours.
