Pineapple Upside Down Cake #1

 

1/2 cup brown sugar

1/4 cup butter, melted

1 (20 oz.) can sliced pineapple

6 Maraschino cherries

2 cups flour

1 1/2 cups sugar

1/2 cup butter, softened

1 1/4 cups milk

2 teaspoons baking powder

3/4 teaspoon salt

2 eggs

1/2 teaspoon vanilla

 

Method

 

1. Preheat oven to 350 degrees. 

2. Sprinkle brown sugar in bottom of pan. 

3. Drizzle ¼ cup melted butter over brown sugar. 

4. Place one pineapple slice in each of the indentations. 

5. Place one maraschino cherry in center of each pineapple slice. 

6. In large bowl, combine remaining ingredients. 

7. Blend at low speed 1 minute, scraping bowl often. 

8. Beat on high speed 3 minutes, scraping bowl occasionally. 

9. Pour batter over pineapple. 

10. Bake at 350 degrees for 50-55 minutes, until toothpick inserted in center 

comes out clean.

11. Immediately turn pan upside down onto serving plate. 

12. Serve warm.
