[CnD] Paleo Vanilla Coconut Yogurt

Paleo Vanilla Coconut Yogurt 
Prep Time: 5 minutes, 24 hours inactive 
Ingredients: 
2 cups full-fat coconut milk 
1 capsule probiotic 
1 scraped vanilla bean 
Cook Time: N/A Serves: 2 
Directions: 
1. 
Drain off the liquid from the can leaving the solidified coconut milk. 
1. 
Place the coconut milk in a glass container with a lid. 
2. 
Open the  probiotic capsule and mix in the  contents. Discard the capsule shell. 
3. 
Place the lid on the container and set it in the oven with the oven light on, leaving the oven off. This will keep the yogurt at 110 degrees, which helps
the beneficial bacteria grow. Leave the yogurt in the oven for 24 hours. 
4. 
Take the yogurt out of the oven and stir in the vanilla. Chill for 3 to 4 hours and enjoy. 
For a lower carb version: Already lower carb as written.
