Prepare an Artichoke

Lemon and bay leaf add flavor.

Trim off bottom leaves. With sharp chef's knife, cut off stem
and 1 inch straight across the top.
With kitchen scissors, trim tips of leaves, to remove thorns.
Heat a large saucepan with salted water. Place artichokes in
pan. Add a few slices of lemon and bay leaf for flavor. Bring to
boil, cover and reduce heat to low, cook 30 to 40 minutes or
until a leaf can be pulled out easily.
Remove from saucepan. Let cool. Spread top leaves open and
remove choke with small spoon. Or slice artichokes in half and
remove choke with small spoo
