Orange Cake Delight

3/4 cup shortening

1 1/2 cups sugar

3 egg yolks, beaten

2 1/4 cups cake flour

1/2 teaspoon salt

3 1/2 teaspoons baking powder

3/4 cup cold water

1/4 cup orange juice

1 tablespoon grated orange rind

3 egg whites, stiffly beaten

Orange Filling (see below)

Orange Frosting (see below)

Preheat oven to 350 degrees. cream together shortening and sugar; add egg
yolks; beat well. Add sifted dry ingredients alternately with water, orange
juice and rind. Fold in egg whites. Pour into 2 greased and floured 9 inch
layer cake pans. Bake for 30 to 35 minutes. Place Orange Filling between
layers and frost with Orange Frosting. Sprinkle grated orange rind in
center.

Orange Filling

2 tablespoons butter

1/4 cup cornstarch

1 cup sugar

1/2 teaspoon salt

2 teaspoons grated orange rind

1 cup orange juice with pulp

1 1/2 tablespoons lemon juice

Melt butter; add cornstarch; blend. Add sugar, salt, grated orange rind and
orange juice; mix well. Cook in double boiler until thick. Remove from heat;
add lemon juice.

Orange Frosting

3/4 cup sugar

1/4 cup water

2 egg whites, stiffly beaten

1/2 tablespoon orange juice

Grated orange rind

Cook sugar and water to thread stage (234 degrees). Pour over egg whites.
Add orange juice; beat until thick.  Mama's Corner.
