Blind Mice
Had a knife that you can adjust the distance between the serrated blade and a straight edge. Turning the dial to the width you want. The width adjust determines the thickness being cut.

The knife comes in a small wooden square block. A two-tine-fork blade stores in the wooden block. The serrated knife cuts into the item being cut. The kjnife costs around $11.

The same tip applies to sighted people too.  Use a serrated knife, preferably a long knife.
